STEPS
PREP THE FILTER
Open the Chemex filter so there are three layers on the spout side and one layer on the opposite side. Place the filter into the Chemex and rinse thoroughly with hot water. This removes any paper taste and preheats the brewer. Discard the rinse water.
GRIND + ADD COFFEE
Grind 30g of coffee medium-coarse. Add the grounds to the filter and gently shake the Chemex to create a flat, even coffee bed. Place the Chemex on your scale and tare to zero.
BLOOM
Start your timer and pour 60g of water, making sure all of the coffee grounds are evenly saturated. Gently swirl the Chemex. Let bloom for 45 seconds.
FIRST POUR
Slowly pour in small circles, working from the center outward without pouring directly onto the paper filter. Pour until the scale reaches 250g. Allow the water level to drop slightly.
FINAL POUR
Continue pouring slowly and evenly until the scale reaches 500g. Give the Chemex one gentle swirl to level the coffee bed.
LET DRAIN
Allow all of the water to draw through the coffee. Your total brew time should land around 4-5 minutes. Remove and discard the filter.
SERVE
Gently swirl the Chemex to mix the brewed coffee before serving. Pour + enjoy.
